Speaking of ginger beer, I made ginger concentrate on Saturday and have been enjoying home-made ginger.... somethings- not quite ginger beer, not just ginger ale, but yummy. I highly recommend it if you are truly interested in ginger beer and not just using it to cover your snooping into empanadas :)

Why do I get this feeling that I need to keep bail money handy at all times?

Dad: It's probably not a bad idea just in case!

Seriously! I used to go in there for stuff for classes and I NEVER KNEW EITHER! I'm on it! SO VERY MANY EXCLAMATION POINTS. There used to be another place on that street I went to as well but it is gone now. Have you been to the taco place on the one way going the other way behind the bank parking lot?

jo: Yes, I love that taco place! Taqueria Mexico on Charles St. We should meet up there sometime.

I have been following this terrific blog ever since Boston Zest recommended it way long ago. We recently moved to Waltham and have been eating our way through our wonderful city. I would love to meet you fabulous ladies at the taco place sometime! Stalker-y as that sounds... Maybe the Boston Zesters could join us, too.

Tammy- I make fake ginger beer, which is a ginger concentrate added to sparkling water. People who are more adventurous ferment it in the fridge, but I'm not that brave.

Chop (in food processor works well) 2 cups unpeeled ginger, add to a pot with 6 cups water and 2 cups sugar, bring to a boil, reduce to a strong simmer and let cook for an hour, until reduced and syrupy.

The original recipe suggested filling a glass 1/3 with concentrate, and top off with sparkling water. I find this to be really really strong, and often reduce the proportion of concentrate.
