See these pancakes? I didn’t make them, Husband did. From all local ingredients. He made bacon, too. All while I was fast asleep, dreaming of the days without children. Perhaps now would be a good time to stop taking him for granted?

I found out about this challenge 2 days before it began. Excuses, excuse, but I decided it was just not enough time to make the commitment. Even so, I have noticed a new awareness that wasn't there before. For instance, last week I needed butter, and when I reached for the usual store brand, I notice a local brand available for about $1.30 more. Now, we use about a pound of butter a month, and I thought, in the grand scheme of things, it's not a whole lot more money. So I thank you for raising my consciousness, even if for this year it only manifests in small ways!

Oh mercy those look good! Go hubby!
Do you happen to have a recipe for the fish and clam chowder? I made one for the first time a few weeks ago and LOVED it. Now I'm curious for other variations and recipes to try.

Wow, that looks great! I was thinking of you as I made an eat local meal the other day. I blogged the recipes here if you're interested: http://veggieproject.blogspot.com/2008/10/potato-pancakes-apple-compote-and.html
Mmm, pancakes. I think we might be having breakfast for dinner!

You can take me for granted, but the pancakes demand the appropriate recognition!

Husband: That's so sweet! Okay.
Whatacard: Hey, that looks good! And I didn't know about your group blog. I'll have to add that to my local food blog links.
April in CT: I'll work on writing up notes on that chowder. It did come out good. We'll turn you into a Yankee, yet!
Melissa: Two days is definitely not enough time to prepare yourself for something like this. But a whole bunch of little things add up to a lot. Thanks for your comment!
