Breakfast:

Snack:
Dried cranberries and havarti cheese (Smith’s Farmstead, MA)
Lunch:
Broccoli and cheddar cheese omelet (broccoli from Drumlin Farm, MA; cheese from Cabot, VT)
Kids had PB sandwich on whole wheat bread, cucumbers, apple
Snack:
Toast with local butter (Mendon Creamery, MA) and honey (Golden Meadow, MA)
Dinner:
Grilled beef kebabs (Codman Farm, MA) with green peppers marinated in red wine vinegar, garlic, rosemary
Honey grilled eggplant (eggplant from Russo's, MA; honey from Golden Meadow, MA)
Steamed pearl barley (Baer’s Best, MA)
Cantaloupe (Bart's Farm, MA)
Notes: Eggplant didn’t go over well with the kids (no surprise there). Preschooler ate some barley, though. Cooks up nicely in the rice cooker (3 cups water to 1 cup barley).




Godspeed in this challenge. Given the amount of processed (albeit "healthy") junk I eat every day I don't know if I could ever handle such an undertaking!

But that's a lot of food. My meals are much simpler.

CC: I think the key to this whole thing is finding local vinegar. I had NO IDEA how much I need vinegar in my life.
