Survival Via Rice Pudding

One of my favorite forms of sleep-deprivation, which I had almost forgotten about until just recently, is the kind where you’ve finally fallen asleep for all of one minute, maybe three, and then comes the screaming.  Your child’s, most likely, but maybe also your own.  And it happens over and over again for hours, each time after only the tiniest fraction of an REM cycle has been achieved, until you can no longer will yourself to fall asleep, and sweet, relaxing death is the most welcome alternative. 

If our government ever decides to add torture to its list of terrorist-interrogation methods (what’s taking so long?), I’m going to go ahead and okay this one.  If it’s good enough for me and new parents everywhere, it’s good enough for al-Qaeda.

Before all hell broke loose in our house last week (fevers, bloody gashes, invisible but extremely painful foreign bodies in eye, vomit on top of projectile vomit and, oh yeah, more vomit), I had made a big pot of rice pudding.  Boy, was I glad I did.  I needed some serious comfort food, and lots of it.  The kids had two corpses for parents for their comfort; the corpses had rice pudding.

Our Favorite Rice Pudding

2 quarts milk (I like to substitute a cup or two of cream in here because I’m just that kind of girl)
1 scant cup jasmine rice
2 cinnamon sticks
1 cup sugar

In a medium pot, combine milk, rice, and cinnamon sticks and bring to a boil, stirring now and then.  Reduce heat and simmer uncovered for about 25 minutes.  Stir in sugar and cook, stirring occasionally, about 35 minutes.  Discard cinnamon sticks and serve warm or cold.

hmm. this is my second try. I just wanted to say yum, and need to try this. I love rice pudding. I bet this is even better than Kozy Shack.

Well sis, sounds like your week went about the same as mine did, only I didn't have vomit, bloody stumps or cornea scratches... but I also didn't have delicious pudding so I guess there you have it.
