I love spice cookies, especially around the holidays. I’ve made a bunch of different variations over the years, but this recipe for ginger cookies kicks the crap out of any of them. Make these cookies. Make them.

Isn't it enough that you walked off with most of your grandson's leftover pirate birthday cake? Arrrrrgh.

That last part was me trying to be a pirate. I actually didn't care that much about the cake. Unlike the dozen cookies I ate for breakfast this morning. Yaaarrrrrr.
